Today, we will continue our theme of fruit peels. We are delighted to share with you more sweet treats using pineapple peels, passion fruit, and watermelons. It’s better to use organic fruits, so you will not worry about the harmful chemicals sprayed.

Pineapple peels are an excellent source of fiber, vitamin C, and beta-carotene. They are known to have many health benefits, such as reducing inflammation, blood clotting, and improving oral health. For today’s recipe on Vegan Preserved Pineapple Peel, we will need a ripe pineapple. Although this one looks green, it is already ripe. The pineapple skin is tough, rough, and spikey, so we first use a peeler to remove the spikes.

For the Vegan Preserved Pineapple Peel, the ingredients are: 492g of pineapple peels, 246g of vegan white granulated sugar, 246g of water

We will need about ten washed passion fruits for this recipe. We are using the pith, the white spongy layer of the skin. So, using a peeler, peel off the hard outer skin first. Then cut off the end that is attached to the pedicle. Place each fruit in a separate bowl, keeping the opened end facing upwards so that the pulp do not flow out. Use a spoon to scoop out the pulp. Set the pulp aside and we will use them later for our preserve.

For the Vegan Preserved Passion Fruit Pith, the ingredients are: 218g of passion fruit pith, 150g of passion fruit pulp, 110g of vegan white granulated sugar, 11g of lemon juice

Watermelon rind is a natural source of citrulline, an amino acid that is known to be helpful for muscle soreness, low blood sugar, and many other ailments. You can leave some of the red pulp on the rind, as they make the vegan candies more attractive. While the green exterior part of the rind is edible, it is tough and not that tasty. Therefore, we will remove it with a peeler.

For the Vegan Candied Watermelon Rind, the ingredients are: 500g of watermelon rinds, 100g of vegan white granulated sugar, 500g-800g of water

Candy Coating: 160g of vegan fine white granulated sugar
