Looking for a quick, delicious side dish that’s perfect for any meal or even on its own? Try these crispy smashed potatoes. They’re fluffy on the inside and irresistibly crispy on the edges. Preheat your oven to 225°C (440°F) and grab a baking tray, some olive oil, a brush, and a potato masher. Take one kilogram (two pounds) of cooked, cold, smaller-sized potatoes and brush a little olive oil onto the tray. Gently press each potato with a masher to flatten slightly without breaking them. Brush the tops with more olive oil, then bake for 15 minutes. Flip them over with a spatula and bake for another 15-20 minutes until golden brown. Serve warm with coarse sea salt and a drizzle of pesto or garlic oil for a dish that’s as simple as it is scrumptious.
